Mononatriumglutamaat, bekend onder de afkorting MSG, is een hartige smaakversterker - maar zijn reputatie door de jaren heen is nogal, nou ja, unhartig.
Veel mensen vermijden MSG vooral in Chinees afhaalmaaltijden en ander voedsel in de overtuiging dat het hoofdpijn, misselijkheid, duizeligheid of zelfs kanker kan veroorzaken. (Ter info: Chinees eten heeft een slechte reputatie gekregen. Het is misschien wel het meest bekende voedsel dat vaak toegevoegde MSG bevat, maar het is nauwelijks uniek - en dat geldt ook voor altijd hebben MSG.)
Tijdens de zwangerschap kunt u zich vooral zorgen maken over het gebruik van MSG. Maar we zijn hier om de feiten recht te zetten: voor de overgrote meerderheid van de mensen is MSG veilig om te consumeren, zowel tijdens de zwangerschap als op andere momenten.
Hier is wat u moet weten over deze smaakvolle voedingsstof en uw 9 maanden zwangerschap.
Wat is MSG?
Hoewel je het misschien associeert met een dampende schotel moo goo gai pan, is MSG niet uniek voor dineren in Aziatische restaurants. Het komt van nature voor in een aantal gewone, rechtstreeks uit de natuur afkomstige voedingsmiddelen, zoals walnoten en tomaten.
Dat komt omdat mononatriumglutamaat gewoon een combinatie is van natrium (zout) en het aminozuur glutamaat.
Naast zijn natuurlijke aanwezigheid in veel voedingsmiddelen, wordt MSG als solo-ingrediënt vervaardigd. Je kunt het in de Verenigde Staten kopen onder de merknamen Ac’cent, Sazón of Ajinomoto. (Sommige merken verkopen ook MSG-smaakstoffen met generieke namen als 'umami-kruiden' of 'umamipoeder'.)
Op ingrediëntlabels kan MSG wat lastiger zijn om te identificeren. Mononatriumzout, natriumglutamaat, mononatriumglutamaatmonohydraat en "smaakversterker E621" zijn enkele van de alternatieve namen voor dit ingrediënt.
Is MSG veilig?
De Food and Drug Administration (FDA) categoriseert MSG als "algemeen erkend als veilig". Volgens de FDA hebben onderzoeksstudies, ondanks enig anekdotisch bewijs van bijwerkingen op MSG, geen negatieve reacties kunnen oproepen.
Om die reden heeft de FDA geen bovengrens vastgesteld voor MSG-inname voor de algemene bevolking - of voor zwangerschap.
Een oudere studie uit 2000 suggereerde dat wanneer mensen grote doses pure MSG consumeerden (zonder voedsel), ze meer kans hadden op onaangename symptomen dan wanneer ze een placebo gebruikten.
In realistische situaties zul je MSG waarschijnlijk niet direct uit de fles in grote hoeveelheden eten (hoe extreem je verlangen naar zwangerschap ook wordt!).
Toen een onafhankelijke wetenschappelijke commissie de impact van MSG op symptomen zoals hoofdpijn, blozen, tintelingen en hartkloppingen onderzocht, ontdekte zij zelfs dat deze af en toe voorkwamen bij doses van 3 gram of meer MSG. Maar een typische portie MSG uit voedsel is minder dan 0,5 gram.
Er is met name beperkt onderzoek gedaan naar de veiligheid van MSG tijdens de zwangerschap. Toch is het onwaarschijnlijk dat het vasthouden aan normale porties voedsel met MSG een probleem zal vormen tijdens de zwangerschap als het nooit eerder een probleem voor u is geweest.
Mogelijke redenen om MSG tijdens de zwangerschap te vermijden
Hoewel studies MSG niet in verband hebben gebracht met onaangename bijwerkingen voor de meeste mensen, zijn voedselallergieën en gevoeligheden een reëel fenomeen. Het is mogelijk om een allergie of gevoeligheid te hebben voor een voedingsmiddel of ingrediënt, inclusief mononatriumglutamaat.
Als u vóór de zwangerschap bijwerkingen heeft gehad op voedingsmiddelen met een hoog MSG, vermijd deze dan terwijl u het verwacht (want het laatste dat u nodig heeft, is meer misselijkheid, hoofdpijn of vermoeidheid op dit moment).
Sommige voedingsmiddelen met een hoog MSG-gehalte, zoals soepen in blik of zoute snacks, kunnen ook veel natrium bevatten. Tijdens de zwangerschap is het slim om uw natriumgehalte op of onder het aanbevolen streefcijfer van 2300 milligram per dag voor volwassenen te houden. Dit kan natuurlijk leiden tot het beperken van sommige voedingsmiddelen met een hoog MSG-gehalte.
(Natriumaanbevelingen veranderen niet specifiek voor zwangerschap, maar uw arts kan andere limieten voorstellen als u complicaties heeft, zoals zwangerschapshypertensie.)
Voedingsmiddelen die MSG bevatten
MSG komt zowel als natuurlijke stof in voedingsmiddelen als als additief voor. Hier vind je het.
MSG komt van nature voor in:
- tomaten
- walnoten
- champignons
- oude kazen, zoals parmezaanse kaas en cheddar
- sardines en ansjovis
- gezouten ham
- bouillon
MSG kan worden toegevoegd aan:
- Chinese en andere Aziatische gerechten
- ingeblikte soepen
- zoute, hartige snacks zoals frites of snackmixen
- bevroren maaltijden
- fast food
- kruidenmixen
het komt neer op
Tijdens de zwangerschap zal het eten van porties van de juiste grootte met MSG u waarschijnlijk niet met een hoop onaangename symptomen bezorgen - en het zal ook uw opgroeiende baby niet schaden.
U kunt zonder zorgen genieten van groenten met umami-smaak, noten, bouillon (en ja, zelfs af en toe een Chinees afhaalmaaltijd).
